This easy pickled garlic recipe is perfect if you have a lot of garlic and want to preserve it. By using a simple pickling brine with cider vinegar, sugar, peppercorns, and mustard seeds, you can easily transform leftover garlic cloves into a tangy and flavorful pickle. Furthermore, it’s delicious when served with a ploughman’s lunch, alongside cheese and cold meats. In addition, it makes a tasty side for your favorite barbecue dishes.

Pickled garlic recipe
First, sterilise jars by washing them thoroughly in hot soapy water. Next, rinse them clean, and then dry them in an oven set to 110°C/Fan 90°C/Gas ¼. Alternatively, if you prefer, you can put the jars through a short dishwasher cycle to sterilise them instead.
2.Peel the garlic cloves and add them to the sterilised jars. Sprinkle a little dried chilli into the jars. Set aside. in a pan.
3.First, pour the vinegar into a pan and then add the sugar, peppercorns, and mustard seeds. Next, stir well before setting the pan on high heat and bringing it to a boil. Once it starts boiling, reduce the heat slightly and continue to boil for 2 minutes. Finally, this mixture becomes your pickling liquid.
4.Next, pour the pickling liquid over the garlic, ensuring that the garlic cloves are completely covered.
5.Seal the jars with vinegar-proof lids and store somewhere dry and dark for at least 2 weeks, checking to make sure the garlic stays covered by the brine. The pickled garlic will keep for a year submerged in the pickling brine.
