Tomato paste without sugar
Tomato paste has a natural sourness; in fact, this tartness is highly valued in cooking. However, to balance the tomato flavor, not only salt but also sugar is usually added to the paste. In this recipe though, we suggest getting by with just adding salt, so that the taste of the finished paste remains as close as possible to natural tomatoes. Therefore, for such a preparation, fleshy, dense fruits with thick walls and a minimal amount of juice will be the ideal raw materials.
Does Tomato Paste Need Sugar?
It depends on the recipe and the desired flavor. Since tomato paste itself can be quite bitter in taste, some recipes may call for adding a little bit of sugar to bring out this flavor. However, the amount of sugar needed is generally quite small, and in many cases, tomato paste is used without any added sweetener.
For example, in some cases, this sweetness may come from other ingredients like onions, garlic, or even honey. Therefore, you might not need to add sugar at all. Ultimately, whether you choose to add sugar or not depends on your culinary preferences and the specific recipe you are using. In any case, understanding the flavor profile of your dish will help you make the right choice.

First, the production process begins with receiving fresh tomatoes. Next, the tomatoes undergo preliminary washing to remove dirt and surface contaminants. After that, workers sort and wash the tomatoes more thoroughly to ensure quality. Then, workers chop the tomatoes into smaller pieces to prepare them for cooking.
Once they chop the tomatoes, workers send them for primary cooking to break down their structure. Following this, they filter the mixture to remove skins and seeds. Then, the filtered tomato juice moves into a formalization tank, where it begins to concentrate.
Subsequently, producers pasteurize the juice to kill harmful bacteria. Afterward, they fill it into cans and seal them for packaging. Once filled, the cans go through another round of pasteurization. Then, they pass under a cold shower to cool them quickly. Finally, the cans are dried, labeled, packaged, and prepared for marketing.
Homemade Tomato Paste Preparation Steps
Start by washing the tomatoes thoroughly. Then, chop them into pieces and add water to help them cook evenly. As the next step, cook the tomatoes until they soften. After cooking, skip the mixture through a filter to separate the skin and seeds.
Next, collect the juice and allow the water to evaporate gradually. After that, heat the thickened tomato juice to reduce it further. Then, add salt to enhance the flavor. If desired, you can also add a small amount of oil at the end for texture and richness.
